Menu Plan Monday 2/1-2/7----Welcome February!

Well, Last week's Baked Rice didn't turn out that great.  The flavors blended beautifully, but baking the rice was a failure.  If we try this again it will stay in the skillet to cook through and we'll skip the baking.
We also abandoned the Potato Soup today in favor of a Roasted Chicken, Mashed Potatoes, and Cabbage-Yum!

Shopping Week 1/23-1/29-Over Budget (AGAIN)!

I knew I would be over budget this week.  There were some great deals that I didn't want to miss out on.  Most weeks I can stay in budget and still get in on the deals that are great for my family, but every once in awhile there are a lot of great deals at once.  I always keep my fingers crossed for a slow week following one of these big weeks and so far it looks like that will be the case for next week!

How is this frugal?  I'm looking out for the best deals for the needs of my family.  Most deals run in cycles and I have a pretty good idea of how much of any particular item I need to last until the next cycle.  I also know that there are great sales weeks and weeks where I am not that excited about the deals.  If I go over budget this week to get in on the great deals, it is still better than going over when these products are full price and I am in dire need of them.  So, by spending a little more right now, I save in the long run.

Wednesday Tip Day (A Day Late)----thinking outside the box!


Sometime in the spring/summer of 2009 I managed to get in on the super deals at Target that made these free or very cheap.  I really stocked up on them since they were such a bargain.
About a month ago we ran out of regular Q-Tips.  I almost went to the store, but since there were no great deals, I thought twice.  I'm so glad I did.  Why did I NEED to spend money when I had, essentially, the same product right in my own closet.
An important part of being frugal is thinking outside the box. 
You can apply this to many things, but most often I apply this practice in regards to recipes.  I love to try new recipes, but often find the fresh ingredients can get pricey.  So, we substitute with something else in season or on sale.
For example, the Chicken Burritos recipe that we use calls for Green Peppers.  Well, often green peppers are the best price, but if red is a better deal then we use red peppers.

There are so many ways to apply thinking out of the box to a frugal lifestyle and there are so many creative people out there who can turn anything into something practical.
I love seeing the magicians at work via posts on their blogs or magazine articles and even in everyday life.

Do you really do that?



We all have our little frugal crazies, right?
So, when my husband left an ALMOST empty bottle of body wash on the counter, I asked, "Is that for the recycling?".  I took the cap off and added some water and put it back in the shower caddy for another use (heck, maybe even 2)! We do this will all of our shampoo, condioner, body wash, .....well, you get the idea.
Does that make me crazy?  Does it make me resourceful? 
One of the things that I most love about a frugal lifestyle is that it emphasizes minimizing waste. 
The lifecycle of my body wash, for example, is such that I have minimized waste all along the way.
It starts with using my own tote and refusing the store's plastic.  Some stores even reward me for bringing my own tote!  Then I drop my receipt in the recycling bin for paper (after I record it in my excel sheet, ofcourse).  It's then used, every last drop is used up.  Finally, when it is quite literally ALL GONE, it finds its way to my recycling bin.  Yes, even recycling saves me money!  After all, it's less trash to pay for at the dump and our dump takes recycleables for FREE!
So, you see, what might seem crazy, really adds up.

BTW-I don't throw away the slivers of bar soap left at the end, I add them to the new bar!

The 3 chicken recipes are favorites in our house and are great to prepare the same day since they all require cooking whole chicken breast and then shredding or cubing.
I usually do the Wild Rice and Broccoli Chicken Breasts first and then reserve some broth for those recipes.  After that I can add some water and spicier seasonings to the pot for the Shredded Chicken to boil in!

Tamale Pie (EASY)!

This is so delicious and easy!
It's pretty frugal, but if you want to go even further, you can make your own polenta much cheaper than the ready-made kind!

Tamale Pie

“Moosewood Restaurant New Classics”

Serves 4
•1 15-ounce can pinto beans with liquid
•1/2 cup fresh or frozen corn kernels
•1/2 cup salsa
•1 teaspoon ground cumin
•1/2 teaspoon dried oregano
•1/4 teaspoon salt
•12 ounces prepared polenta
•3 tablespoons chopped fresh cilantro (optional)
•1 cup grated sharp Cheddar cheese

1. Preheat the oven to 350 degrees F. Lightly oil a 10-inch cast-iron skillet or an 11-inch baking dish. Set aside.
2. Empty the beans into a large bowl, and mash with a potato masher or fork. Add corn, salsa, cumin, oregano and salt. Mix and set aside.
3. Slice the polenta roll into 1/4-inch-thick rounds. Arrange the rounds in the skillet, slightly overlapping. Spoon the bean mixture over the polenta, and sprinkle on the cilantro and cheese.
4. Cover and bake for 15 minutes, and then uncover and bake for15 minutes more, until the beans are bubbling and hot. For a crisp topping, place under the broiler for 2 to 3 minutes. Let sit for 10 minutes before serving.

I've also added cooked cubed/shredded chicken and/or cooked rice to this dish!

Wednesday Tip Day-Counting Calories is like shopping sales!

In the end of December I outlined a few of my current goals.  Last week I wrote about our path to eliminate debt, focusing on organization and improving time management skills.


My 4th goal is to:
4. Focus on exercise and healthier eating, but do so within our frugal lifestyle.

I have a great deal of extra weight that I have been carrying for some time.  I want and need to focus on reaching a healthy weight and then maintaining that weight.  I want to feel better so I can better enjoy my life and my family.  Up until very recently I had been opposed to counting calories to achieve these weight loss goals. What changed? 

If you are frugal, it goes without saying that you love a good great deal. I love paying 38c on a grocery trip and seeing the bottom of my receipt where it says, "Total Savings today is $40.22" (that's really one of my receipts from Shoprite last week)! So, I thought to myself, "Why can't I apply the same numbers to weight loss goals"?  If I can get the same rush from looking at everything I ate for the day and knowing that not only was it purchased at rock bottom prices, but it was healthy and afforded me lower caloric intake, then maybe counting calories can really work for me.
I'm going to allow a little wiggle room in my grocery budget to buy healthier foods if necessary, but am hoping it won't be.
I plan to track my numbers and post percentages of my total goal here alongside my monthly financial check-in.  I'm hoping the new way of looking at the numbers combined with the tracking will help me stick to my goals.

Menu Plan 1/18-1/24


We've been keeping things pretty simple around here and it's been really nice to have a loose plan, but primarily to go with the flow.  I've been making a real effort to increase fresh fruits and veggies and it is quite refreshing!

Summer Squash Casserole!



My mother makes a fabulous Summer Squash Recipe.  I had some zucchini that needed to be used up.
I often steam them with some onions, garlic and tomotoes, but wasn't in the mood for that, so I deciced to use them in place of the Summer Squash in this recipe.

SUMMER SQUASH CASSEROLE

2 lbs summer squash, sliced and cooked (do not overcook)
2lbs onions, sliced and cooked (do not overcook)
1 cup shredded carrots
1 cup sour cream (I always sub low-fat)
1 stick margarine melted
1 small pkg herb stuffing mix
1 can cream of chicken soup (I always sub low-fat)

Melt a little butter on bottom of casserole dish.  Layer Stuffing, 1/2 squash, 1/2 onions, 1/2 raw carrots, 1/2 sour cream, and 1/2 cream of chicken.  Pour 1/2 butter over top.  Repeat layers, saving a little stuffing for top.  Bake at 350 degrees for 25-30 minutes.

I didn't have any herb stuffing so I substituted corn bread stuffing, which worked fine in this recipe.
I ate a little last night and froze 1/2 the casserole for another time.
I used some leftovers on top of pasta for lunch!

I stopped in to Michael's last week to check out the Christmas clearance. I was specifically hoping to find some good stocking stuffer items clearanced. I was pleased with the results!

All of these cute princess items will be great in DD3's Easter basket and were only 33c each!

Shopping Week 1/9-1/15---I love Overage!

I made too many stops at Shoprite this week, but I'm ok with that.
The McCormick grinders were on sale for 99c and the 75c Q from recent inserts were giving overage with doubling.  I decided it was worth ordering Qs from ebay since each coupon gave 51c overage toward my other purchases.  I have 4 Qs left and am planning one last trip tomorrow to use up my Tony's Pizza Rain Check from a few weeks back.  The pizzas are 38c each after Qs with that rain check and I'll apply the overage toward that purchase!  Yes, that is 20 packages of bacon in my pictures! Those were 38c after Qs!

Next, I stopped at Aldi, Adams, and Target for a few things.

A quick stop at the bulk bins in Mother Earth's Warehouse followed by a quick run in to Target for the Special K!

(I used a giftcard from a previous deal to pay for the special k, which would have been $1.73)
MOTHER EARTH'S= $13.92

GRAND TOTAL= $48.62

It's a little more than I like to spend in a week, but I knew this was going to happen.
When I stopped in to Aldis to pick up a few of the produce items and parmesan cheese, I decided to buy a second container of parm so as to avoid stopping in again for awhile.  I made a similar decision at Mother Earth's in regards to the rice and beans.  I stocked up a bit more than we need right now, so as to avoid another trip into the store anytime soon.

Throwing away Money!

In my recent post regarding my current goals, I spent a great deal of time discussing my desire to be more organized. With the Holidays and our home schedule a bit disrupted of late, I haven’t been cooking at home as much. I went to look for oranges for snack the other day and was very disappointed to find a few spoiled produce items.

There is nothing I detest more than waste, so I am blogging about it here to hold myself accountable.



I wrote primarily about my lack of organization leading to wasted time. Well, this serves as a good reminder that my lack of organization also leads to wasted products, which means I have wasted money.

I’m strongly considering using outlook reminders for scheduling tasks/reminders and will definitely include a reminder to check my fridge weekly for soon to expire food and my pantry monthly for the same.

Wednesday Tip Day---Replaced with....3 goal posts at once!

I missed last week's post because.......................well, life happens!

Today, I'm going to focus on three of the goals I am working on in my life right now.

1. Continue on our path to eliminate debt.
2. Improve Organization in relationship to all aspects of our life.
3. Create and follow a better schedule to maximize "work" time, so we can better enjoy "play" time.
 
We have set out to eliminate debt.
In April of 2009 we officially set out to pay off all debt.  Up until that point we had stopped using credit cards but had not set up an official budget or plan.  We set up a budget and an official plan and have continued to update it as things change and evolve.  Our general plan has stayed the same, but we have modified the details as necessary.  Constantly re-evaluating any plan helps to keep it manageable.
We will track our progress basing our goals off of our current standing.  In other words all debt we currently have will be considered 100% of our debt even though we actually made some progress in 2009.  We are essentially resetting our progress measures.  We have an Emergency Fund set aside and at this time have no plans to contribute further to that fund.
1.  Continue to pay off credit card debt focusing on one card at a time.  We currently take any extra income and put it all toward this goal.  I am setting a goal to payoff all credit card debt by January 1, 2011.


2. Pay off Auto Loan by May 2010.  We have set ourselves up so that this should be easily accomplished.  This will mean that in May we will own two cars completely.  We will then take about 1/3 of our current car payments and put that money into a savings account for car repairs and/or a new car when the time comes.  One car is older and we hope to drive it as long as possible, but you never know when it might quit, so we want to have some savings to deal with anything that might come up.   We hope to increase the contributions to this savings account once our Credit Card Debt has been dealt with.
3. Research options for Health Insurance.  We are currently covered under a plan that will no longer be available to us as of this fall, so we need to start researching our best options for coverage and cost.
4. Explore opportunities to earn extra income.  Any extra income will help to reduce our debt faster. (Is that obvious? *smile*)
 
Improve Organization and Time Management
(I decided these two go hand in hand so here they are together.)

Many people would tell you that I am a very organized person.  Would you believe I was sent to the Caribbean at the age of 8 as a mother's helper for my 2yo cousin and to help my aunt organize the home office?!  However, I feel that there is still a lot of improvement to be made in this area.
1. Focus on better time management and better organization of my time.  This is the area in which I hope to improve the most.  I don't need to be perfect, simply improved.  I need to organize things so that there is less last minute running around, less last minute doing.
2.  Improve Menu Planning.  I need to get more variety into the menu and plan further in advance to make sure that I have any ingredients that we do not normally have on hand.
3.  Keep home filing in better order.  My "to be filed" file is too often neglected.
4.  Organize housework in such a fashion that it does not pile up/back up as often.  Every time we do a major house cleaning I say to myself, "Now, I just need to do a little every day to stay on top of this" and I never keep to that.  The end result is another major cleaning day which usually happens on a weekend day and takes away from time we could be spending doing other family activities.  I really hope to get a little done each night after the kids go to bed, so we can better enjoy our weekends.

Those are the major organizational and time management tasks I am working on, but I am certain there are a million other little things that will arise on a daily basis.  Ultimately, I hope to be organized enough to take on any task that comes up, planned or unplanned.

A thrift Store Find!

I normally run my errands after dropping DD3 at preschool, rather than driving home only to head back out to pick her up.  Since, I've slowed down a bit on the drugstore shopping, I have more "free" time with DD1 during those morning hours.  I managed to get everything necessary done early today and so we made a quick stop into one of the local thrift stores.  I had driven by last week and noted a big sign in the window advertising 50% off all clothes!  This particular store is quite small and like most second hand stores, is hit or miss.  There was a cute sweatshirt for DD1, that would have been a quarter, but it was the size she is currently growing out of, so I skipped that deal.
I had two great finds:




They look pretty dull in this picture, but are really quite practical!
DD3 is wearing a 5/6 right now and these are size 6 blue cotton pants in excellent condition and for only 50c!
The sweater is for me and is Gap at a cost of $1.  It is so soft!  I can't wait to wash it so I can cuddle up in it.  It needs a little work to remove some of the pilling, but is perfect for this cold weather!

Ropa Vieja Slow Cooker Recipe!



Ok, ok, I know that's a pic of DD3's Dora Plate.
I snapped a pic of my plate as we were eating the other night and she insisted I snap one of her plate as well.
I'm lucky she did because both pics looked good on the little screen on the camera, but when I uploaded the pic of my plate it left a lot to be desired.  I would go so far as to say you might lose your appetite!  Luckily, the picture of her plate was decent enough to use and does a little better justice to this delicious recipe/meal.

Ropa Vieja
Serves 6-Prep Time 10 minutes

1 Flank Steak (1.5lbs)
Salt and Black Pepper to taste
1 tbsp Olive Oil
1 med. green bell pepper, chopped
1 jar ( 1lb 10oz) Ragu Chunky Pasta Sauce
1/2 c beef broth or water
1 can (4oz) chopped green chilies drained
1/4 tsp red pepper flakes

1. Season Steak with salt and pepper. Heat Olive Oil in skillet over med-high heat. Cook Steak 3-4 minutes or until just browned.
2. Combine pasta sauce, green pepper, green chilies, and red pepper flakes in slow cooker.  Add Steak, covering with broth or water.
3. Cook on LOW 8-10 hours or HIGH 4-6 hours or until meat is fork tender.  With 2 forks, shred meat.  Return meat to sauce and heat through.

Notes:
~ I like to use fresh chilies and we add a bit more than the 4oz equivalent as well as a bit more of the red pepper flakes.  We like it a little hot!
~I also add Green Olives toward the end (long enough to heat through), which add a nice zing here and there!

Menu Plan 1/11-1/17-----Use It Up!


Last week I had planned a nice Carribean Nights Slow Cooker for Wednesday. Well, as often happens, my well laid plan fell to pieces!  I forgot to pick up Plaintains!
My mom had given me a new Slow Cooker Recipe Book for my Birthday last month and then copied a few of the recipes since they looked so good!  She happened to mention over the Holidays that she had tried the Ropa Vieja recipe and that it was delicious!
I quickly decided that Ropa Vieja would be a great substitute!
And a great substitute it was!  It was easy and delicious!


DD3 insisted I take a picture of her plate while I was taking one of mine.  It's a good thing she did because the picture of my plate came out horribly, which I just found out as I attempted to load it here!

Thursday- Turkey Dogs and Mac N Cheese with Carrots
Friday- Frozen Pizza and Salad
Saturday- Black Beans and Rice with veggies
Sunday- Leftover Beans and Rice

I'm trying to use up a few things that have been in my freezer for a bit and need to be used up!
It's time to make room for new bargains and some more chicken breast, which we buy in 40lb bulk!
