It's Wednesday. We started the week without power from Miss Irene.  Power was restored, but normalcy has not been restored.

Menu Plan Monday--Stew in the Summer!

I'm getting low on proteins with no great deals in immediate sight, so I'm trying to work with what's on hand.


MONDAY- Tamale Pie

TUESDAY- Beef Stew with brown rice (normally more of a winter dish, but hey)
WEDNESDAY- Sausage with beans and rice
THURSDAY- Pasta with shrimp and veggies
FRIDAY- Eat Out
SATURDAY- Chicken on the grill with Quinoa
SUNDAY-Leftovers

Menu Plan Monday- Last week fell apart...how about this week?


So, last week did not go as planned at all, but hey, c'est la vie!
I'm hoping to get to the ginger lime chicken this week.  It's a favorite and I haven't made it in a long time.

MONDAY- Tilapia with seasoned rice and green beans
TUESDAY- Hot dogs and salad
WEDNESDAY- Ginger Lime Chicken with brown rice and green beans
THURSDAY- Pasta with zucchini and chicken sausage
FRIDAY- Leftovers
SATURDAY- Eat out for DD2's 3rd Birthday!
SUNDAY- Grilled Chicken with potato and green salad

Menu Plan: Time to bring out some old favorites!




I'm working some crazy hours this week, but here's what I'm hoping to serve!
I find it even more important to menu plan when it's busy!

MONDAY-Chicken Tacos (that old stand-by)
TUESDAY- $6 take-out pizza night
WEDNESDAY- Leftover chicken tacos
THURSDAY- Slowcooker Ropa Vieja


FRIDAY- Ginger Lime Chicken (Check back next Sunday for the recipe.)
SATURDAY- Eat Out
SUNDAY- Turkey Burgers and Hot Dogs with side salads

Menu Plan Monday- recycling a bit of last week's menu


Well, we had so much grilled chicken last week that we really didn't need to cook much else. We skipped the tilapia and didn't need to eat out at all!  This week will be a short one since we are celebrating my cousin's wedding over the weekend and won't have to worry about dinners.

MONDAY- Grilled Chicken
TUESDAY- Hot Dogs and French Fries
WEDNESDAY- Burritos (I'm experimenting with a slight variation on the filling, so stay tuned on that!)
THURSDAY- Tilapia smothered in salsa
FRIDAY- wedding festivities
SATURDAY- wedding festivities
SUNDAY- wedding festivities

Menu Plan Monday- simplicity with a side of creativity

Still sticking to my theme of simplicity, but trying to add a dash of something here and a pinch of something there to keep it fresh.  A little creativity can go a long way!


MONDAY- leftover chicken
TUESDAY- tilapia smothered in salsa with pasta and zucchini
WEDNESDAY- Southwest Pasta Skillet (I'll be substituting ham for the chicken.)
THURSDAY- leftovers
FRIDAY- home-made pizza on the grill
SATURDAY- eat out treat!
SUNDAY- turkey burgers and hot dogs with potato salad

Menu Plan Monday- Simplicity is Key!

It's another week with the same general philosophy.  Keep it simple.

MONDAY-leftover Caribbean Nights
TUESDAY-$6 pizza night (a local pizzeria offers $6 pies on Tuesdays) with salad
WEDNESDAY- Tilapia with taco rice and mixed vegetables
THURSDAY- grilled chicken with pasta and salad
FRIDAY- leftovers
SATURDAY- Eat Out Night (probably our favorite Chinese/Hibachi)
SUNDAY- Chicken Burritos with rice and beans and salad

Menu Plan Monday-- Back into the swing of things!


Well, I've been lacking in motivation and am finally feeling a bit of rejuvenation.  With that feeling comes the urge to get this organized and in order and with that goal in mind, I am back to menu planning.
I'm trying to be very realistic in my goals so that I can keep it real.  There are three major factors that play into menu planning at this stage in my life.
1-Healthier eating habits are important and I am working hard to keep it healthy.
2-By the end of my work day I am T-I-R-E-D!  I can't think about big, fancy meals.  It's time to keep it simple!
3-When it is hot I do not want to heat up the kitchen.


Here's what we are eating this week:
MONDAY- Stir Fry Style Sauteed Chicken and rice with salad
TUESDAY- Ham and couscous with green beans
WEDNESDAY- Spaghetti with peppers and broccoli
THURSDAY- Turkey dogs with salad
FRIDAY- Rice and beans with peppers and corn
SATURDAY- eat out treat: we're taking a day trip and I will pack lunches and plan to eat something out for dinner
SUNDAY- Caribbean Nights with brown rice

Menu Plan: What we're eating this week!

I've been pretty bored with food lately and also pretty lazy.  I'm attempting a few new recipes this week.  I may or may not get to them, but if I set the goal I'm at least moving in the right direction!

Monday- Leftover Paella from Sunday's Valentine's Dinner
Tuesday-  Mushroom Steak Diane Stew in the slowcooker (recipe to come soon)
Wednesday- leftovers
Thursday- Baked Penne with Ham and Broccoli
Friday- Chicken Tikka Massala and Vegetable Curry (I don't use recipes for these.  I just wing it!)
Saturday- leftovers
Sunday- Grilled Chicken Salad

Menu Plan, well, my sort of plan! wk of 1/17-1/23

So, I haven't been posting menu plans lately because we haven't really been following a "firm" plan.  It just doesn't seem to work for us these days.  I assure you we have been eating :)
Here's an idea for the upcoming week of how our menus work:

Monday- cook something with enough leftovers for Tuesday.  Monday is one of the more relaxed days in our home, so there is some time for more involved preparations.
Tuesday- Monday's leftovers with a new veggie if necessary (If there aren't enough leftovers this becomes Pizza night since we found a local pizzeria that sells $5.55 pies on Tuesday.  This is also the night I work LATE, so easy is the game plan.)
Wednesday- cook something easy and quick: fish, hot dogs, easy chicken recipes, sausage and try for enough to have leftovers for Thursday.  These are two more busy days in our home!
Thursday- leftovers or something easy, again!
Friday, Saturday, and Sunday- We reserve these days for meals that require a little more prep.  One night is often leftovers.  I particularly enjoy cooking these days with my husband and sometimes the kids even help.

I've learned accepted the fact that I can not cook "gourmet" meals every night or even most nights and this is ok as long as there is balance in our meals.

WEDNESDAY- Baked chicken legs with rice and brussel sprouts
THURSDAY- Spaghetti with meat sauce and side salad
FRIDAY- Salmon with pasta and pesto
SATURDAY- Sheperd's Pie
SUNDAY-  Chicken Yassa with rice and carrots

When it's a busy week I turn to my old standby...Chili. 
A huge batch at the beginning of the week and we can add things to it later to change it up a bit.

MONDAY-Chili with rice and green beans
TUESDAY- Hot Dogs with chili
WEDNESDAY- Chicken Nuggets with French Fries and Broccoli
THURSDAY- Sausage with Pasta and Zucchini
FRIDAY- Pizza and Salad
SATURDAY-  Chicken with Baked Potatoes

Menu Plan Monday wk of 10/4-10/10


Well, I'm hoping that the change of season will help spice things up a bit around here because I am bored of the same old same old.  Every time I try and come up with something new, I am missing an ingredient or too tired to give it a go and it's back to the usuals. At least with the change of seasons comes a bit of a change of "regulars".

MONDAY- BBQ Chicken in the Slow Cooker with rice and cauliflower
TUESDAY- Roast (some kind of crock pot recipe), baked potatoes, and carrots
WEDNESDAY- leftovers
THURSDAY- Pasta with Sausage and Peppers
FRIDAY- Tilapia with Couscous and Zucchini
SATURDAY- Homemade Pizza with Salad
SUNDAY- Chicken Yassa

Menu Plan ----errrr, Thursday???


My kids have been sick, work has been BUSY, and now I'm sick.  It's weeks like this that I don't really menu plan, but am most thankful for the "convenience" foods and frozen casseroles in my freezer.

Here's what this week's menu has naturally evolved as:

Monday- Grilled Chicken with Uncle Ben's Garlic Brown Rice
Tuesday- Chicken Nuggets and French Fries with salad
Wednesday-  Baked Pasta with Sausage and Zucchini Casserole (both from the freezer)

Here's what I think the rest of the week might be:

Thursday-  Ropa Vieja with rice and salad
Friday-  Tamale Pie with a side of Hormel Chili Master Chili
(my darling husband needs a bit of meat and the chili should satisfy that!)
Saturday-  Tilapia with pasta and whatever local veggies we can pick up
Sunday- leftover pasta and veggies

The UP side:
I had plenty of easy stuff in the freezer and we're using up some food that needs to be used up. 
The DOWN side:
I need to restock my freezer.  It's looking pretty baren.

Well, we never got around to trying the new Sichuan Chicken recipe, so we'll try and get to that this week.
It was the good old standby, Chicken Yassa, on Sunday  instead.
