Need to shred some (a lot ) of cheese.
Put your brick of cheese in the freezer for 30 minutes.
The slightly frozen cheese will be easier to shred!

I had no idea that slightly frozen cheese was easier to shred! I use that technique for cutting up meat, but never thought to try it with cheese. Good to know!
Love your name, by the way... Noelle is my first daughter's middle name. Hadn't planned it... but when she arrived 4 months early on Christmas Eve, well, it had to be done. :)
Freezing is a great tip. I've also heard that rubbing a little oil on the grater stops the cheese from sticking while you grate.
