I got some zucchini, too, and had no idea how to cook it. A co-worker gave me this recipe http://www.foodnetwork.com/recipes/paula-deen/zucchini-bread-recipe/index.html - and it is delicious! My mom says you can also shred the zucchini and freeze it in two-cup portions to make in the winter, etc.
I've also been told you can slice the zucchini, coat it with flour and spices and fry, or slice it with other veggies like squash, potatoes, etc., cover with butter and grill.

I love it in stir-frys, quiche, gazpacho, stuffed, battered & fried. You can even make a yummy relish out if it, if you like to can.

We LOVE zucchini -- I have about 40 zucchini recipes on my blog (http://joyinmykitchen.blogspot.com/search/label/Zucchini).

Our favorites are:

Hope that helps!

I grate it and saute it in some butter with salt and pepper. Tastes great!

I'm hoping to make it again soon. It's been almost a year and my kids still talk about it.
