Menu Plan ----errrr, Thursday???

My kids have been sick, work has been BUSY, and now I'm sick.  It's weeks like this that I don't really menu plan, but am most thankful for the "convenience" foods and frozen casseroles in my freezer.

Here's what this week's menu has naturally evolved as:

Monday- Grilled Chicken with Uncle Ben's Garlic Brown Rice
Tuesday- Chicken Nuggets and French Fries with salad
Wednesday-  Baked Pasta with Sausage and Zucchini Casserole (both from the freezer)

Here's what I think the rest of the week might be:

Thursday-  Ropa Vieja with rice and salad
Friday-  Tamale Pie with a side of Hormel Chili Master Chili
(my darling husband needs a bit of meat and the chili should satisfy that!)
Saturday-  Tilapia with pasta and whatever local veggies we can pick up
Sunday- leftover pasta and veggies

The UP side:
I had plenty of easy stuff in the freezer and we're using up some food that needs to be used up.
The DOWN side:
I need to restock my freezer.  It's looking pretty baren.

Wednesday Tip Day- Add some spice to your life!

Tired of spending tons of money on anti-aging creams?
Up your intake of Anti-inflamatory spices such as ginger, turmeric, and cinnamon.
"Every time inflammation is triggered inside your body (say, when you're exposed to air pollution), it puts a strain on your system, including skin." Redbook, October 2010
Reducing inflammation can reduce fine lines!

Wednesday Tip Day----Freezing Meat?

I recently read a clipping from Family Circle, aug 2010, that suggested dipping meat, fish and poultry in water before freezing.  "This gives the food an even protective layer that helps prevent freezer burn".

What are your favorite tricks for freezing proteins such as meat, fish and poultry?

Wednesday Tip Day- Remove Lime Build-Up with Vinegar!

Do you have stubborn lime build up on your faucets?
This is one of the biggest problems in our home.
Soak a rag in vinegar, then wrap it around the faucet and secure using any clips you have around the house.  Let it sit for at least an hour.  The lime build up should come off easily!
